 To make our amazing pasta, you need the finest durum wheat semolina from Tamworth, grown in perfect conditions and using unique wheat varieties.   

Our signature Sourdough Bronze die pasta uses natural fermentation to slowly ferment the natural sugars inside the semolina using wild bacteria to generate more flavour and promote digestion.  

Handcrafted with Care

Our fresh regional pasta dough is made from durum semolina and purified water, then stretched, shaped and individually quick frozen into our beautiful and delicious pasta range. Our bronze die pasta nests and hand nested.   We have a state of the art, solar powered facility and follow strict HACCP food safety practices.  Our pasta is made with total care and professionalism giving you the confidence that your eating the best.

Fresh Frozen Pasta

Quick Freezing fresh pasta is the most natural and healthy way to preserve pasta so that the Organoleptic properties (aroma, flavour, colour) and nutritional qualities remain unaltered.

Our pasta has 18 months shelf life at -18°C, allowing our fresh handmade pasta to be enjoyed now or in the future.

Cook with Ease

Our pasta can be cooked straight from frozen in minutes, unleashing the aroma, flavour and texture of the finest semolina pasta.  The fresh pasta is made and produced by Pastai Beau Vedelago and Italian Cuisine Chef Bruce Mckenna. 

With fresh frozen pasta, you only need to cook what you need and save the rest for later, providing less waste and more convenience.
